#WeekendsWithMitsueki Homecooked Brunch N Dinner Cooks - 22 Mar 2026

Hello weekends and back to back cooking for today! Our morning brekkie was settled with a simple meal of chicken sourdough bread, spinach and egg omelette paired with a strawberry banana smoothie to start off.

Other bites came after and more One Piece shows + a workout after we completed the 2nd season today. He enjoyed the live action and was pleased with the casting and overall story/pace.

Time for dinner preps!

Honestly its not like its difficult, but time is needed to prep everything. Such as a 12 hr timeframe to soak my shiitake mushrooms overnight to rehydrate them, at least 2-3 hrs to soak the black fungus etc. Other than that – its all the rest of the prep work, fortunately not THAT much but it takes up abit of time too.

Used the scissors to cut the chicken thighs (faster than chopping..), chopped the veggies, mushrooms (shiitake, black fungus and king oyster mushroom) and some ginger.

Marinated the chicken and mushrooms with ginger and a concoction of cornstarch, soy sauce, oyster sauce, mushroom water and sesame oil from the recipe I got off here!

At the same time, my rice was cooking away and it was a mix of garlic, mushroom stems and mushroom water for added fragrance.

Popped the marinated meat and mushrooms in the fridge (10 mins) while I started doing king oyster mushroom and broccoli stir fry with broccoli. One tip I learned is to fry the mushrooms FIRST to get all the water out (else it will be really wet), and THEN add in the broccoli florets. They all cook at different timings too, so just something to note! Set it aside for later.

Meanwhile, using the same pan – I added the steamer lid and popped the marinated mushroom chicken meat on top after pouring in water. Closed the lid and just let it steam fully in the juices for 10 mins. At the 8 min mark, I added in my leftover abalone to just heat up as it was already cooked technically.

And that’s 2 dishes done – just missing a soup for the 3 dish meal hahaha. This was sufficient for 2 pax with 1 set of leftovers, just nice for a meal next round 🙂

I also prefer this so I can easily portion control what we are eating. Of course..I tend to be very generous when ladling the amount for my hubs HAHA.

And that’s it for today. 2 easy cooks but honestly..needing time more than anything. When they say you need 20 mins, its always just the cooking time..exclude prepping/clean up so don’t get fooled hahah!!
